4 bone-in or boneless pork chops (about 1/2 to 3/4 inch thick)
Salt and black pepper
1 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme (optional)
1/2 teaspoon cayenne pepper (optional, for a bit of heat)
2 large eggs
1/4 cup milk
2 cups panko breadcrumbs or regular breadcrumbs
Vegetable oil or canola oil, for frying
Instructions:

Prepare the Pork Chops:

Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.
Set Up the Breading Station:

In a shallow bowl, combine the flour, paprika, garlic powder, onion powder, thyme (if using), cayenne pepper (if using), and a pinch of salt and black pepper.
In another shallow bowl, whisk together the eggs and milk.
Place the breadcrumbs in a third shallow bowl.
Bread the Pork Chops:

Dredge each pork chop in the seasoned flour, coating both sides and shaking off any excess.
Dip the floured pork chop into the egg mixture, letting any excess drip off.
Coat the pork chop in the breadcrumbs, pressing the breadcrumbs onto the meat to ensure an even coating. Repeat with the remaining pork chops.
Heat the Oil:
