Spicy Thai Pasta Salad
Ingredients:
For the Salad:

8 oz (about 225g) pasta (such as rotini, penne, or bowtie)
1 cup shredded carrots
1 cup red bell pepper, thinly sliced
1 cup cucumber, diced
1/2 cup red onion, thinly sliced
1/2 cup fresh cilantro, chopped
1/4 cup chopped peanuts (optional, for crunch)
1/4 cup fresh basil or mint leaves, chopped (optional)
For the Dressing:

1/4 cup creamy peanut butter
1/4 cup soy sauce
2 tablespoons lime juice (about 1 lime)
2 tablespoons honey or brown sugar
1 tablespoon fish sauce (or more soy sauce for a vegetarian option)
1 tablespoon sriracha or Thai chili sauce (adjust to taste for spice level)
1 clove garlic, minced
1 teaspoon grated ginger
2-3 tablespoons water (to thin out the dressing as needed)
Instructions:
Cook the Pasta:

Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta. Set aside.
