Authentic Mexican Street Corn (Elote)
Ingredients:
4 ears of corn, husked and cleaned
1/2 cup mayonnaise
1/4 cup sour cream or Mexican crema
1 cup cotija cheese, crumbled (or Parmesan cheese if cotija is unavailable)
2 tablespoons fresh lime juice (about 1 lime)
1 clove garlic, minced
1 teaspoon chili powder
1/2 teaspoon smoked paprika (optional, for extra smokiness)
1/2 teaspoon ground cumin (optional, for extra flavor)
1/4 teaspoon cayenne pepper (optional, for extra heat)
Salt to taste
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Instructions:
Preheat Grill:

Preheat your grill to medium-high heat. You can also use a grill pan or broiler if a grill is not available.
Grill the Corn:

Place the corn on the grill and cook, turning occasionally, until all sides are charred and the corn is cooked through, about 10-15 minutes.
Prepare the Sauce:

In a medium bowl, mix together the mayonnaise, sour cream (or crema), lime juice, minced garlic, chili powder, smoked paprika, ground cumin, cayenne pepper (if using), and a pinch of salt.
Coat the Corn:
