Classic Taco Casserole Recipe
Ingredients:
1 lb ground beef (or turkey, chicken, or a meat substitute)
1 onion, diced
1 bell pepper, diced
1 packet taco seasoning mix (or homemade taco seasoning)
1 cup salsa
1 cup sour cream (or Greek yogurt for a lighter option)
1 cup shredded cheddar cheese (or your favorite cheese)
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn (optional)
6-8 small flour or corn tortillas
1 tablespoon olive oil (for cooking)
Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C).

Cook the Meat: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper and cook until softened, about 5 minutes. Add the ground beef and cook until browned. Drain excess fat if necessary.

Season and Mix: Stir in the taco seasoning and salsa, and cook for an additional 2-3 minutes. Add the black beans and corn, mixing until well combined.
