Ingredients:
For the Cannoli Shells:

2 cups all-purpose flour
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup unsalted butter, cold and cut into small pieces
1 large egg
1/2 cup dry white wine (or a substitute like milk or water)
Vegetable oil (for frying, if deep frying)
For the Ricotta Filling:

2 cups ricotta cheese (drained)
1 cup powdered sugar
1/2 cup mini chocolate chips (optional)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
For Coating:

1/2 cup granulated sugar
1 tablespoon ground cinnamon
Instructions:
Prepare the Cannoli Shells:

Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, cinnamon, and salt.
Cut in Butter: Add the cold butter pieces and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
Add Egg and Wine: Mix in the egg and gradually add the wine until the dough comes together. You may need a little more or less liquid, so add it slowly.
Knead and Chill: Turn the dough out onto a lightly floured surface and knead until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Prepare the Filling:

Mix Ingredients: In a medium bowl, combine ricotta cheese, powdered sugar, mini chocolate chips (if using), vanilla extract, and cinnamon. Mix until smooth and well combined.
Chill: Refrigerate the filling until ready to use.
Shape the Shells:

Roll Out Dough: On a floured surface, roll out the dough to about 1/8-inch thickness.
Cut and Form: Use a round cutter (about 3-4 inches in diameter) to cut out circles of dough. Wrap each circle around a cannoli form or metal tube, sealing the edges with a bit of water.
Fry, Air Fry, or Bake:
Deep Fry:

Heat vegetable oil in a deep pan to 350°F (175°C).
Fry the cannoli shells in batches until golden brown, about 1-2 minutes per side. Remove with a slotted spoon and drain on paper towels.
Air Fry:

Preheat the air fryer to 350°F (175°C).
Brush the cannoli shells with a bit of oil.
Air fry in batches for about 6-8 minutes, or until golden and crispy.
