Chocolate Bourbon Mousse

Chocolate Bourbon Mousse
Ingredients:

6 oz (170g) dark chocolate, chopped (70% cocoa is ideal)
2 tablespoons unsalted butter
2 large egg yolks
1/4 cup granulated sugar
1/4 cup bourbon
1 cup heavy cream
1 teaspoon vanilla extract
A pinch of salt
Instructions:

Melt Chocolate:

In a heatproof bowl over a pot of simmering water (double boiler), melt the dark chocolate and butter together, stirring occasionally until smooth. Remove from heat and let it cool slightly.
