Ingredients:

1 cup rolled oats
1/2 cup whole wheat flour
1/4 cup almond meal (or more whole wheat flour)
1/4 cup honey or maple syrup
1/4 cup coconut oil (or unsalted butter)
1/2 cup mashed ripe banana (about 1 medium banana)
1/2 cup chopped nuts (such as almonds, walnuts, or pecans)
1/4 cup dried fruit (such as raisins, cranberries, or chopped dates)
1/4 cup dark chocolate chips (optional)
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon vanilla extract
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Mix Wet Ingredients:

In a small saucepan over low heat, melt the coconut oil. Remove from heat and stir in the honey or maple syrup, mashed banana, and vanilla extract until well combined.
Combine Dry Ingredients:

In a large bowl, mix together the rolled oats, whole wheat flour, almond meal, ground cinnamon, and salt.
