Easy Chicken Coconut Curry
Ingredients:

1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 tablespoon vegetable oil or coconut oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons curry powder (mild or medium, depending on your spice preference)
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1 can (13.5 oz) coconut milk
1 cup chicken broth
1 tablespoon tomato paste
1 tablespoon soy sauce or tamari
1 tablespoon brown sugar or honey
1 red bell pepper, sliced
1 cup frozen peas (or fresh peas if available)
Salt and black pepper, to taste
