Mango Chicken with Rice

Ingredients:

Meat:

1 1/2 lbs Chicken thighs, skinless boneless

Produce:

2 tbsp Cilantro leaves, chopped
4 cloves Garlic, minced
1/2 tsp Ground ginger
2 1/2 cups Mango chunks, fresh
1 Onion, chopped

Canned Goods:

2 cups Chicken stock or broth
2 tbsp Tomato paste

Condiments:

1 tbsp Honey

Baking & Spices:

Black pepper, to taste
1/2 tsp Ground cinnamon
1 tsp Yellow curry powder
Pinch of red pepper flakes
Salt, to taste

Nuts & Seeds:

1/3 cup Cashew pieces, heaping, roasted, unsalted

Dairy:

3 tbsp Ghee (clarified butter)
