How to Make Your Own Pepper Jelly

Ingredients:
– 3 cups chopped bell peppers (red, green, or a mix)
– 1 cup chopped hot peppers (such as jalapeños or other preferred variety)
– 1 cup apple cider vinegar
– 1 cup honey
– 1/2 teaspoon salt
– 4 cups sugar
– 3 tablespoons low sugar pectin

Directions:
1. Prepare the Peppers:
– Wash, seed, and finely chop the bell peppers and hot peppers. You can use a food processor for this step to save time. Ensure the mixture is finely chopped but not pureed.

2. Cook the Jelly:
– In a large, non-reactive pot, combine the chopped peppers, apple cider vinegar, honey, and salt. Bring the mixture to a boil over medium-high heat, stirring frequently.

3. Add Sugar and Pectin:
– Gradually add the sugar to the pot, stirring constantly to dissolve.
– Once the sugar is dissolved, add the low sugar pectin, stirring well to combine.
