Cinnamon Maple Roasted Sweet Potatoes

Ingredients:
3 large sweet potatoes, sliced into 1/2-inch thick rounds
3 tablespoons unsalted butter, melted
1/4 cup maple syrup
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 teaspoon fresh thyme leaves
1/2 teaspoon sea salt
1/2 teaspoon black pepper (or cayenne pepper for extra heat)
Optional: 1/4 cup crumbled feta cheese for garnish
Instructions:
Preheat Oven:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Prepare Sweet Potatoes:

Wash and dry the sweet potatoes. Slice them into 1/2-inch thick rounds. You can peel the sweet potatoes or leave the skin on, depending on your preference.
Season Sweet Potatoes:

In a large bowl, toss the sweet potato slices with melted butter, salt, pepper, and cinnamon. Ensure each slice is evenly coated.
Arrange on Baking Sheet:

Lay the sweet potato slices in a single layer on the prepared baking sheet, making sure they do not overlap. This will help them roast evenly.
Roast the Potatoes:

Place the baking sheet in the preheated oven and roast for 30 minutes, flipping the sweet potato slices halfway through, until they are golden brown and tender.
