Authentic Italian Bruschetta
Ingredients:

4 ripe tomatoes, preferably on the vine (Roma or San Marzano are ideal)
2 cloves garlic, peeled
1/4 cup extra-virgin olive oil, plus more for drizzling
1 tablespoon fresh basil leaves, chopped
1 tablespoon fresh parsley, chopped (optional)
1 teaspoon balsamic vinegar (optional)
Salt and freshly ground black pepper, to taste
1 French baguette or ciabatta loaf, sliced
Instructions:

Prepare the Tomatoes:

Cut the tomatoes into small dice, discarding the seeds if they are too watery.
Place the diced tomatoes in a bowl.
Add Seasonings:

Mince one garlic clove and add it to the tomatoes.
Stir in the chopped basil and parsley (if using).
Drizzle in 1/4 cup of extra-virgin olive oil.
Add balsamic vinegar if using, and season with salt and freshly ground black pepper to taste.
Mix everything together and let it sit for about 15-20 minutes to allow the flavors to meld.
