BEEF AND CHEESE MEXICAN SANCHILADAS

Instructions:

Preheat your oven to 375°F (190°C). Grease a baking dish and set it aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become soft and fragrant.
Add the ground beef to the skillet and cook until it is browned and cooked through. Drain any excess fat.
Mix in the red enchilada sauce, ground cumin, and chili powder. Season with salt and pepper to taste. Simmer the beef mixture for a few minutes.
Soften the corn tortillas by heating them briefly in the microwave or on a griddle.
Spoon a portion of the beef mixture into each tortilla and sprinkle some shredded cheese on top. Roll up the tortillas and place them seam-side down in the prepared baking dish.

Garnish with chopped fresh cilantro and sliced jalapeños (if using) before serving. Serve with a dollop of sour cream on the side.
