Birria Tacos Recipe

Birria Tacos Recipe
Ingredients:
For the Birria:

2 lbs beef chuck or short ribs, cut into chunks (you can also use goat meat if preferred)
4 dried guajillo chilies
2 dried pasilla chilies
2 dried ancho chilies
4 cloves garlic, minced
1 large onion, chopped
1 tablespoon ground cumin
1 tablespoon dried oregano
1 teaspoon smoked paprika
1/2 teaspoon ground cloves
1/4 cup apple cider vinegar
2 cups beef broth (or water)
2 tablespoons vegetable oil
Salt and pepper to taste
For the Tacos:

Corn tortillas
Shredded cheese (like Oaxaca or Monterey Jack)
Finely chopped onion
Fresh cilantro, chopped
Lime wedges
For the Consomé (optional):

1-2 cups of the cooking liquid from the birria (strained)
