Cheesy Chicken Quesadillas

Heat a large skillet over medium heat and add 1 tablespoon of olive oil or butter.
Place a tortilla in the skillet and sprinkle with a layer of cheddar and Monterey Jack cheese. Top with some of the cooked chicken, and optional onions and bell peppers if using. Add another layer of cheese on top.
Place a second tortilla on top and press down gently. Cook for 2-3 minutes per side, or until the tortillas are golden brown and crispy and the cheese is melted. You may need to add more oil or butter between quesadillas.
4. Serve:

Remove from the skillet and let the quesadilla cool for a minute before slicing into wedges. Garnish with fresh cilantro if desired.
Serve with salsa, sour cream, and guacamole on the side.
