Country Tomato and Bacon Pie
Ingredients:
For the Pie Crust:

1 1/2 cups all-purpose flour
1/2 tsp salt
1/2 cup (1 stick) unsalted butter, cold and cut into small pieces
1/4 cup ice water (more if needed)
For the Filling:

6-8 ripe tomatoes, sliced (about 4 cups)
6 slices bacon, cooked and crumbled
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup mayonnaise
1/4 cup sour cream
1 tbsp all-purpose flour
1 tsp dried basil (or 1 tbsp fresh basil, chopped)
1/2 tsp dried oregano
Salt and pepper, to taste
1 tbsp fresh parsley, chopped (for garnish, optional)
Instructions:
Prepare the Pie Crust:

Mix Dry Ingredients: In a large bowl, whisk together the flour and salt.
Cut in Butter: Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces.
Add Water: Gradually add the ice water, one tablespoon at a time, until the dough starts to come together. You may need a little more or less water.
Chill: Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
