Enchanted Forest Blackberry Velvet Delight

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
2. In a big bowl, mix together flour, sugar, baking soda, salt, and cocoa powder.
3. In another big bowl, gently beat together the oil, buttermilk, eggs, food coloring, vanilla, and vinegar. Then mix this wet stuff into the dry stuff until it’s just mixed. After that, add the coffee and stir until it’s smooth.
4. Split the batter evenly between the two cake pans you prepared earlier. Bake them for 30 to 35 minutes, or until you stick a toothpick in the middle and it comes out clean.
5. Let the cakes cool completely in the pans on a wire rack. Once they’re cool, take them out of the pans and layer them with blackberry preserves. Spread a thin layer of preserves over the cake and then arrange fresh blackberries on top. Finally, sprinkle some edible glitter on it for that extra magic.
