Fried Cabbage

Fried Cabbage
Ingredients:

1 medium head of cabbage, chopped or shredded
4 slices bacon, chopped (or 1 tablespoon vegetable oil for a vegetarian version)
1 medium onion, finely chopped
2 cloves garlic, minced
1 bell pepper, chopped (optional, for extra flavor and color)
1 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper (adjust to taste)
1/2 teaspoon paprika (optional)
1 tablespoon apple cider vinegar or white vinegar
1/2 teaspoon sugar (optional, to balance the flavors)
1/4 cup water or chicken broth (optional, for extra moisture)
Instructions:

Cook the Bacon (if using):

In a large skillet or frying pan, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pan. If using vegetable oil, skip this step.
Sauté the Vegetables:

In the same skillet with the bacon fat (or oil), add the chopped onion. Cook until softened and translucent, about 3-4 minutes.
Add the minced garlic and cook for an additional 30 seconds, until fragrant.
If using bell pepper, add it now and cook for another 2-3 minutes.
Add the Cabbage:

Add the chopped cabbage to the skillet. Stir to combine with the onions, garlic, and bell pepper.
Cook over medium heat, stirring occasionally, until the cabbage starts to soften and caramelize, about 8-10 minutes. If the cabbage starts to brown too quickly, add a splash of water or chicken broth to deglaze the pan and prevent burning.
