Ginger Shots

Place the chopped ginger into a blender or food processor.
Add the lemon juice and honey (if using).
Blend the mixture until smooth, adding water as needed to achieve your desired consistency. Aim for a thick juice consistency.
Pour the mixture through a fine sieve or cheesecloth to strain out the pulp. Use a spoon to press out as much liquid as possible.
Transfer the ginger juice into a clean bottle or jar with a tight-fitting lid.
Store in the refrigerator for up to 1 week.
