Greek Chicken Gyros

• Preheat your grill or a large skillet over medium-high heat. If using a skillet, add a small amount of olive oil to prevent sticking.
• Remove the chicken from the marinade, stack up the chicken thighs in the skewer, put in the over, the over temperature set at 180 Degrees (fan assisted).Bake the chicken uncovered for about 20 minutes, or until it turns golden brown and develops some crispy bits. Lightly cover the chicken with foil and continue baking for an additional 40 minutes, or until the internal temperature reaches about 80°C (175°F) for thighs or 70°C (160°F) for breasts. Adjust the time for breasts, reducing it by approximately 15 minutes.

Once the chicken reaches the proper temperature, remove it from the oven and let it cool for 5 minutes. Carve the chicken tower with a sharp knife, mimicking the slicing method used in kebab shops.

4. Serve:
• Slice the cooked chicken thighs into thin strips.
• Serve the chicken in pita bread with your favorite toppings such as tomatoes, cucumbers, red onions, tzatziki sauce, and fresh parsley or lettuce. You can serve with rice, salad, or use it to make your very own kebab.
