Hawaiian Haystacks
Ingredients:
For the Chicken and Gravy:
4 cups cooked, shredded chicken (you can use rotisserie chicken for convenience)
2 cups chicken broth
1 cup heavy cream or half-and-half
1 can (10.5 oz) cream of chicken soup
1/4 cup all-purpose flour
1/4 cup butter
1 small onion, finely chopped
2 cloves garlic, minced
Salt and pepper to taste
For the Rice:
2 cups white rice
4 cups water
1 tablespoon butter (optional)
Toppings (Customize to your preference):
Chopped fresh pineapple
Shredded cheddar cheese
Sliced green onions
Chopped celery
Sliced olives
Diced tomatoes
Toasted coconut
Crispy chow mein noodles
Chopped nuts (such as cashews or almonds)
Instructions:
Cook the Rice:
In a medium saucepan, bring 4 cups of water to a boil. Add the rice and butter (if using), then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed. Fluff with a fork and keep warm.
