Hibachi Dinner at Home

Add the frozen peas and carrots and cook for another 2 minutes.
Push the vegetables to one side of the pan and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them with the vegetables.
Add the cold cooked rice and stir well to combine. Add soy sauce, oyster sauce (if using), and sliced green onions. Stir-fry for another 3-5 minutes, until the rice is heated through and slightly crispy.
4. Make the Yum Yum Sauce:

In a small bowl, whisk together the mayonnaise, ketchup, soy sauce, rice vinegar, garlic powder, paprika, and sugar until smooth. Adjust seasoning to taste.
5. Serve:

Plate the grilled chicken, stir-fried vegetables, and hibachi fried rice. Serve with a side of yum yum sauce for dipping.
Tips:
Rice Preparation: Use cold, day-old rice for the best texture in fried rice. It’s less likely to be mushy.
Vegetable Variations: Feel free to use other vegetables like snap peas, zucchini, or cabbage based on your preference.
Grilling: If you don’t have a grill, you can cook the chicken in a skillet or under the broiler.
Enjoy your homemade hibachi dinner! This meal offers a wonderful blend of flavors and textures that can be customized to your liking.
