Homemade Apple Pie

Prepare the Pie Crust:

In a large bowl, combine the flour, salt, and granulated sugar.
Add the cold butter cubes. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter remaining.
Gradually add ice water, a tablespoon at a time, until the dough just starts to come together. You may not need all the water.
Divide the dough into two equal parts, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
Prepare the Apple Filling:

In a large bowl, toss the sliced apples with granulated sugar, brown sugar, flour (or cornstarch), cinnamon, nutmeg, salt, lemon juice, and vanilla extract. Mix well to coat the apples evenly.
Roll Out the Dough:

On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie pan. Transfer the dough to the pan, gently pressing it into the bottom and up the sides. Trim any overhanging dough.
Roll out the second disk of dough to create the top crust. You can either place it as a whole sheet on top or cut it into strips to make a lattice pattern.
Assemble the Pie:

Fill the prepared pie crust with the apple filling.
Place the top crust over the filling. If using a whole sheet, cut a few slits in the top to allow steam to escape. If using a lattice pattern, weave the strips over the filling and trim the excess dough.
Pinch the edges of the crust together to seal and crimp them as desired.
Brush the top crust with beaten egg and sprinkle with granulated sugar.
Bake the Pie:

Preheat your oven to 425°F (220°C).
Place the pie on a baking sheet to catch any drips. Bake for 45-55 minutes, or until the crust is golden brown and the filling is bubbling.
If the edges of the crust start to brown too quickly, cover them with aluminum foil.
Cool and Serve:

Allow the pie to cool on a wire rack for at least 2 hours before serving. This helps the filling set properly.
Tips:

Apple Selection: A mix of tart and sweet apples often works best. Granny Smith apples are tart and hold their shape well, while Honeycrisp apples add a nice sweetness.
Make Ahead: You can prepare the pie and freeze it before baking. Bake from frozen, adding an additional 10-15 minutes to the baking time.
Serve: Apple pie is delicious on its own or with a scoop of vanilla ice cream or a dollop of whipped cream.
