Kolaczki (Polish Cookies)

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll Out the Dough:

On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness.
Cut and Fill the Cookies:

Using a cookie cutter or a glass, cut out squares or circles of dough (about 2 inches in size).
Place a small spoonful of jam in the center of each square or circle.
Fold the edges of the dough over the jam to create a pinwheel or envelope shape. Alternatively, you can fold opposite corners to form a triangle or fold in half to make a half-moon shape.
Bake:

Place the filled cookies on the prepared baking sheet. Bake for 12-15 minutes, or until the edges are lightly golden.
Cool and Dust:

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Once cooled, dust the cookies with powdered sugar.
