Marinated Cucumbers, Onions, and Tomatoes

Prepare the Vegetables: In a large bowl, combine the sliced cucumbers, sliced onions, and tomato wedges.
Mix the Marinade: In a small bowl, whisk together olive oil, apple cider vinegar, sugar (or honey), salt, and black pepper until the sugar is dissolved.
Combine and Marinate: Pour the marinade over the vegetables. Add chopped dill and parsley. Gently toss to ensure all the vegetables are coated with the marinade.
Chill: Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best flavor development.
