Mashed Potatoes with Garlic-Olive Oil:

Place the potato chunks in a large pot and cover them with water. Add a pinch of salt to the water. Bring the water to a boil over medium-high heat and cook the potatoes until they are fork-tender, usually around 15-20 minutes.
While the potatoes are boiling, heat the olive oil in a small skillet over medium heat. Add the minced garlic and sauté for about 2-3 minutes, stirring frequently, until the garlic becomes fragrant and slightly golden. Be careful not to burn the garlic.

Give the mashed potatoes a final stir, making sure all the ingredients are well combined.
Transfer the mashed potatoes to a serving dish and garnish with chopped fresh parsley or chives, if desired.
