Meyer Lemon Jelly

1. Prepare your canning jars and lids by sterilizing them in boiling water.
2. In a large pot, combine the Meyer lemon juice and powdered pectin. Stir well to dissolve the pectin.
3. Bring the mixture to a boil over high heat, stirring frequently.
4. Add the granulated sugar all at once, stirring constantly to dissolve the sugar.
5. Return the mixture to a rolling boil and boil for 1-2 minutes, stirring constantly.
6. Remove the pot from heat and skim off any foam that may have formed on the surface.
7. Carefully ladle the hot jelly into the prepared canning jars, leaving 1/4-inch headspace.
8. Wipe the jar rims with a clean, damp cloth and place the lids on the jars.
9. Process the jars in a boiling water bath for 10 minutes to seal.
