Mint Chocolate Chip Mousse Brownies

Ingredients:

For the Brownie Layer:
– 1 cup Unsalted butter
– 1 and 1/2 cups Granulated sugar
– 4 Large eggs
– 1 cup All-purpose flour
– 1/2 cup Unsweetened cocoa powder
– 1/2 tsp Salt
– 1 tsp Vanilla extract
– 1 cup Chocolate chips (semisweet or dark)

For the Mint Chocolate Chip Mousse:
– 1 and 1/2 cups Heavy cream
– 1 cup Mint chocolate chips
– 1/2 tsp Peppermint extract
– Green food coloring (optional)
– 1/2 cup Mini chocolate chips (semisweet or dark), for garnish

Directions:

1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
2. In a medium saucepan, melt the unsalted butter over medium heat. Remove from heat and stir in granulated sugar until well combined.
3. Add the eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
4. In a separate bowl, sift together all-purpose flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. Fold in the chocolate chips until evenly distributed.
6. Pour the brownie batter into the prepared baking pan and spread it out into an even layer.
7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and let it cool completely in the pan.
