Ingredients:

For the Brine:

2 cups buttermilk
1 tablespoon hot sauce (optional, for extra flavor)
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
For the Coating:

2 cups all-purpose flour
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon cayenne pepper (optional, for heat)
1 teaspoon salt
1/2 teaspoon black pepper
For Frying:

Vegetable oil (or other neutral oil with a high smoke point), for frying
For the Chicken:

8 pieces of chicken (such as drumsticks, thighs, or breasts)
Instructions:
Brine the Chicken:

In a large bowl, whisk together the buttermilk, hot sauce, paprika, garlic powder, onion powder, salt, and pepper.
Add the chicken pieces to the buttermilk mixture, making sure they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for the best flavor and tenderness.
Prepare the Coating:

In a large bowl or a shallow dish, mix together the flour, paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and pepper.
