Roasted Cabbage Wedges with Onion Dijon Sauce:

1. Preheat your oven to 450°F (230°C) and prepare a baking sheet with parchment paper or a silicone mat.
2. Cut the cabbage half into four wedges and place them on the baking sheet. Brush the cut sides of each wedge with oil and season with salt and pepper. Flip the wedges and repeat the oil and seasoning.
3. Roast in the preheated oven for 10-12 minutes, then flip the wedges and continue roasting until they’re nicely browned, about 8-10 minutes more.
4. For the sauce: In a small saucepan, mix together butter, onion, Dijon mustard, garlic, salt, and pepper. Cook over medium heat until the butter is melted. Keep the sauce warm until serving.
