Roasted California Blend Vegetables

1 bag (16 ounces) frozen California blend vegetables
2 tablespoons olive oil
1 clove garlic, minced
1/2 teaspoon dried basil or oregano
Salt and pepper, to taste
1 tablespoon soy sauce (optional for a savory touch)
Instructions:

Heat the Oil:

In a large skillet, heat the olive oil over medium heat.
Add the Vegetables:

Add the frozen vegetables directly to the skillet. Cook, stirring occasionally, until they are heated through and start to brown, about 8-10 minutes.
Add Flavor:

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
Season with dried basil or oregano, salt, and pepper. If using soy sauce, add it during the last minute of cooking.
Serve:

Serve as a side dish, or add to stir-fries, pasta dishes, or grain bowls.
