Sausage Rice Stuffed Pumpkins

Start by preheating your oven to 375°F (190°C). Carefully cut off the pumpkin tops and clear out the seeds inside.
In a pan on medium flame, cook the sausage until it’s entirely browned, and then pour off the extra fat.
In a big mixing bowl, blend the sausage with rice, onion, bell pepper, garlic powder, Italian seasoning, salt, and black pepper thoroughly.
Evenly fill each pumpkin shell with the prepared sausage-rice mixture, then sprinkle mozzarella on top.
Put the filled pumpkins in a baking dish, add a slight amount of water to the dish’s base, and bake for about 30 to 35 minutes until the pumpkins soften.
Let the baked pumpkins cool slightly before serving, and savor this fulfilling meal!.
