Slow Cooker Hasselback Potatoes

Instructions:

  1. Slice the potatoes about 1/4-inch thick, being careful not to cut all the way through. You can use chopsticks to help with this process.
  2. Thinly slice the cold butter, about 1/8-inch thick.
  3. Cut each slice of cheese into 8 pieces, resulting in 40 slices.
  4. Insert slices of butter and cheese alternately into the sliced potatoes, starting with butter, then cheese, and repeating until all slices are used.
  5. Line the bottom of the slow cooker with parchment paper. Carefully place the prepared potatoes on top, ensuring the slices remain intact.
  6. Melt the remaining butter and brush it on top of each potato.
  7. Sprinkle salt over the potatoes, if desired.
  8. Cover and cook on high for 4 hours.
  9. Before serving, optionally sprinkle with chopped parsley and bacon bits for extra flavor. Enjoy your delicious and unique potato dinner!
