Southern Style Red Beans and Rice
Ingredients:
For the Red Beans:

1 pound dried red beans (or 2 cans of red beans, drained and rinsed, for a quicker version)
1 tablespoon vegetable oil
1 large onion, finely chopped
1 bell pepper, chopped (green or red)
3 celery stalks, chopped
4 cloves garlic, minced
1 pound smoked sausage (andouille or kielbasa), sliced into rounds
1 ham hock or 2 cups diced ham (optional, for added flavor)
1 bay leaf
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper (adjust to taste)
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
4 cups chicken broth
1 tablespoon Worcestershire sauce
2 tablespoons hot sauce (optional, for extra heat)
For the Rice:

2 cups long-grain white rice
4 cups water or chicken broth
1/2 teaspoon salt
