Southern-Style Smothered Chicken

1. **Prepare the Beef Bacon:** In a skillet over medium heat, cook the beef bacon until brown and crispy. Chop the beef bacon and set it aside. Reserve the beef bacon grease.

2. **Prepare the Chicken:** In a bowl, mix together the flour, onion powder, garlic powder, paprika, salt, pepper, ginger, and cinnamon. Set aside 1/4 cup of this mixture. Pat the chicken dry and dredge it in the remaining flour mixture.

3. **Cook the Chicken:** In the same skillet with the reserved beef bacon grease, melt 1 tablespoon of butter over medium heat. Cook the chicken until golden brown on both sides. Remove the chicken from the skillet and set it aside.

4. **Make the Gravy:** Add enough butter to the skillet to have 4 tablespoons of fat. Whisk in the reserved flour mixture and cook for about 3 minutes, scraping the skillet to loosen browned bits. Gradually add the milk and chicken broth, whisking constantly until the mixture comes to a simmer.

5. **Combine and Serve:** Return the chicken to the skillet and simmer for 10 minutes. Sprinkle the chopped beef bacon over the chicken and garnish with fresh parsley or thyme before serving.
