In another bowl, mix mashed avocado with lime juice and a pinch of salt.
Assemble Sushi Stacks:
Use a round mold or a small can to layer the sushi stacks. Start with a layer of sushi rice, press down lightly.
Add a layer of the spicy shrimp mixture, then a layer of mashed avocado.
Finish with a topping of diced cucumber, grated carrot, and a sprinkle of black sesame seeds.
Serving:
Carefully remove the mold. Repeat for remaining stacks.
Serve immediately with soy sauce and wasabi.
