Sweet and Spicy Pork Lettuce Wraps

Prepare Sauce:
In a medium bowl, whisk together all sauce ingredients. Set aside.
Cook Pork:
Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat.
Add ground pork and cook until no pink remains, occasionally stirring to crisp the pork.
Drain any excess fat from the skillet.
Add Veggies and Sauce:
To the pork, add water chestnuts, red pepper, carrots, and onion. Cook until vegetables are soft, about 5-7 minutes.
Stir in the prepared sauce, reduce heat to medium-low, and simmer for 8-10 minutes to thicken the sauce and meld the flavors.
Assemble Wraps:
Spoon pork mixture into butter lettuce leaves.
Garnish with chopped scallions, cilantro, and peanuts. Serve immediately.
