Teriyaki Pork Tenderloin Skewers

Metal or wooden skewers (soaked in water for 30 minutes if wooden)
Directions:�Prepare the Marinade:
In a large resealable bag, combine soy sauce, brown sugar, mirin, sesame oil, ginger, and garlic. Add the pork pieces, seal the bag, and toss to coat. Refrigerate for at least 2 hours, preferably overnight.
Prepare the Skewers: 2. Preheat the grill to medium-high heat (about 400°F). 3. In a bowl, toss the bell peppers, onion, and pineapple with olive oil, parsley, salt, and pepper. 4. Thread the marinated pork, bell peppers, onion, and pineapple onto the skewers, alternating the pieces.�Grill the Skewers: 5. Grill the skewers for about 10 minutes, turning every 2-3 minutes, until the pork reaches an internal temperature of 145°F. 6. Remove from the grill and let rest for a few minutes before serving.�Serve: 7. Serve the skewers hot, optionally garnished with extra parsley.
