Texas Roadhouse Rattlesnake Bites

In a large bowl, combine the ground beef, jalapeño peppers, Monterey Jack cheese, cheddar cheese, cream cheese, green onions, garlic powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
Shape the mixture into small balls, about the size of a ping pong ball.
Place the flour, beaten eggs, and breadcrumbs into three separate shallow bowls.
Roll each ball in the flour, then dip into the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
Heat oil in a deep fryer or skillet to 350°F (175°C).
Fry the coated balls in batches for 3-4 minutes, or until golden brown and crispy.
Remove from the oil and drain on paper towels.
Serve hot with your favorite dipping sauce and enjoy!
