The Best Baked Chicken and Rice Casserole

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare the Chicken:

Rub the chicken with olive oil, salt, pepper, paprika, garlic powder, and onion powder.
In a large skillet over medium-high heat, sear the chicken for 3-4 minutes per side until browned. The chicken does not need to be cooked through as it will finish cooking in the oven.
Prepare the Rice Mixture:

In the same skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
Add the minced garlic and cook for another 1 minute.
