Turkish Bread (Pide) Recipe

Prepare the Dough: In a large mixing bowl, combine the flour, salt, sugar, and instant yeast. Mix well to combine the dry ingredients.

Add Wet Ingredients: Add the warm water, warm milk, and olive oil to the dry ingredients. Mix until a dough forms.

Knead the Dough: Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic. Alternatively, you can knead the dough in a stand mixer fitted with a dough hook.

First Rise: Place the kneaded dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Shape the Dough: Punch down the dough to release the air. Divide the dough into 2 equal portions for larger breads or into smaller portions for individual breads. Shape each portion into a ball and then flatten it into an oval or round shape, about 1/2 inch thick.

Second Rise: Place the shaped dough on a baking sheet lined with parchment paper. Cover the dough with a damp cloth and let it rise for another 30 minutes.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Egg Wash: In a small bowl, combine the beaten egg with 1 tablespoon of water. Brush the top of each bread with the egg wash. Sprinkle sesame seeds or nigella seeds on top if desired.

Create the Pattern: Using your fingers, gently press indentations in the dough to create a pattern. This is optional but gives the bread a traditional look.

Bake: Bake the bread in the preheated oven for 15-20 minutes, or until it is golden brown and cooked through.

Cool and Serve: Allow the bread to cool slightly on a wire rack. Serve warm or at room temperature.
