Greek Pasta Salad
Ingredients:
For the Salad:

8 oz rotini pasta (or any other short pasta like penne or fusilli)
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, finely chopped
1/2 cup kalamata olives, pitted and halved
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped (optional)
1/4 cup fresh basil, chopped (optional)
For the Dressing:

1/4 cup extra-virgin olive oil
3 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 garlic clove, minced
1 teaspoon dried oregano
1/2 teaspoon dried basil (optional)
Salt and freshly ground black pepper, to taste
Instructions:
Cook the Pasta:

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente.
Drain the pasta and rinse under cold water to stop the cooking process and cool the pasta. Set aside.
Prepare the Vegetables:

While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and halve the kalamata olives.
