Easy Almond Joy Cookies
Ingredients:
1 cup sweetened shredded coconut
1 cup semi-sweet chocolate chips
1 cup almond butter (smooth or chunky, depending on preference)
1/2 cup whole almonds (for topping)
Instructions:
Prepare the Cookie Base:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the shredded coconut and almond butter. Mix until well combined.
Shape the Cookies:

Using a tablespoon or cookie scoop, drop spoonfuls of the coconut mixture onto the prepared baking sheet. Flatten them slightly with the back of the spoon or your fingers to form cookie shapes.
Add Chocolate:

Place a few chocolate chips on top of each cookie. Gently press them into the coconut mixture.
Top with Almonds:
