Ingredients:
2 pounds potatoes (such as Yukon Gold, red potatoes, or russets)
1 tablespoon salt
1/4 cup unsalted butter (optional, for added richness)
Freshly ground black pepper to taste
Fresh herbs (such as parsley, chives, or dill), chopped, for garnish (optional)
Instructions:
1. Prepare the Potatoes:

Peel the potatoes if desired (leaving the skin on is fine for a more rustic look and added texture).
Cut the potatoes into evenly sized chunks (about 1-2 inches). This ensures they cook evenly.
2. Boil the Potatoes:

Place the potato chunks in a large pot and cover with cold water.
Add the salt to the water.
Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer.
3. Cook Until Tender:

Simmer the potatoes for about 10-15 minutes, or until they are fork-tender. To test, insert a fork or knife into a potato chunk; it should slide in easily.
