Mini Apple Pie Bites
Ingredients:
For the Filling:

2 large apples (such as Honeycrisp or Granny Smith), peeled, cored, and diced
1/4 cup granulated sugar
1 tablespoon brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon all-purpose flour or cornstarch
1 tablespoon lemon juice
For the Crust:

1 package (14.1 ounces) refrigerated pie crusts (2 crusts per package), or homemade pie dough
1 egg, beaten (for egg wash)
Granulated sugar and ground cinnamon (for sprinkling)
Instructions:
1. Prepare the Apple Filling:

In a medium saucepan, combine the diced apples, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, flour (or cornstarch), and lemon juice.
Cook over medium heat, stirring occasionally, until the apples are tender and the mixture has thickened, about 8-10 minutes.
Remove from heat and let cool slightly.
2. Prepare the Crust:

Preheat your oven to 375°F (190°C).
Roll out the pie crusts on a lightly floured surface.
Use a round cutter (about 2-3 inches in diameter) or the rim of a glass to cut out circles from the dough.
3. Assemble the Bites:
