Healthy Tuna Stuffed Avocado
Ingredients:
2 ripe avocados
1 can (5 oz) tuna in water, drained
1/2 cup diced bell pepper (red, yellow, or green)
1/4 cup finely chopped red onion
1 small jalapeño, seeded and finely chopped (optional, adjust to taste)
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
1 tablespoon olive oil
1/4 teaspoon ground cumin
Salt and black pepper, to taste
Instructions:
Prepare the Tuna Mixture:

Combine Ingredients: In a medium bowl, combine the drained tuna, diced bell pepper, red onion, chopped jalapeño (if using), and chopped cilantro.
Season: Add the lime juice, olive oil, ground cumin, salt, and black pepper. Mix well to combine all ingredients.
Prepare the Avocados:

Cut and Remove Pit: Cut the avocados in half and remove the pit. Use a spoon to scoop out a bit of the flesh from each half to create more space for the filling.
Season: Lightly sprinkle the avocado halves with a bit of salt and lime juice to prevent browning and enhance flavor.
