Mixed Berry Crumble

Mixed Berry Crumble
Ingredients:

For the Berry Filling:

4 cups mixed berries (such as strawberries, blueberries, raspberries, and blackberries)
1/2 cup granulated sugar
1 tablespoon lemon juice
2 tablespoons cornstarch (or 3 tablespoons if berries are very juicy)
1 teaspoon vanilla extract
For the Crumble Topping:

1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cut into small pieces
1/2 cup old-fashioned rolled oats (optional, for added texture)
Instructions:
Preheat Oven:

Preheat your oven to 350°F (175°C).
Prepare the Berry Filling:

In a large bowl, combine the mixed berries, granulated sugar, lemon juice, cornstarch, and vanilla extract. Toss gently to coat the berries evenly.
Transfer the berry mixture to a 9×13-inch baking dish or a similar-sized oven-safe dish.
Make the Crumble Topping:

In a medium bowl, combine the flour, granulated sugar, brown sugar, cinnamon, and salt.
Add the cold butter pieces to the bowl. Use a pastry cutter, fork, or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
Stir in the rolled oats if using.
