Basic Pickled Red Onions
Ingredients:

1 large red onion, thinly sliced
1 cup apple cider vinegar (or white vinegar)
1 cup water
1/4 cup granulated sugar
1 tablespoon salt
Flavor Options (Choose your favorites or mix and match):

2 cloves garlic, thinly sliced
1 teaspoon mustard seeds
1/2 teaspoon black peppercorns
1/2 teaspoon crushed red pepper flakes (for heat)
1 sprig fresh thyme or rosemary
1 bay leaf
1 tablespoon pickling spice
Instructions:

Prepare the Onions:

Peel and thinly slice the red onion into rings or half-moons, depending on your preference.
Make the Pickling Brine:

In a medium saucepan, combine the vinegar, water, sugar, and salt. Stir over medium heat until the sugar and salt are completely dissolved. Bring the mixture to a boil, then remove from heat.
Add Flavorings (Optional):

If you’re using additional flavorings, add them to the brine. For example, add garlic, mustard seeds, peppercorns, or other spices.
