Lemon Pancakes

Lemon Pancakes
Ingredients:

1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk (or milk with 1 tablespoon lemon juice added and allowed to sit for 5 minutes)
1/2 cup sour cream (or plain Greek yogurt)
2 large eggs
1/4 cup unsalted butter, melted
Zest of 1 large lemon
2 tablespoons fresh lemon juice (about 1 lemon)
Instructions:

Prepare the Wet Ingredients:

In a large bowl, whisk together the buttermilk, sour cream, eggs, melted butter, lemon zest, and lemon juice until well combined.
Mix the Dry Ingredients:

In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Combine Wet and Dry Ingredients:

Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix; a few lumps are okay.
