Homemade Ice Cream Cake
Ingredients:
For the Cake Layer:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
1/4 teaspoon salt
For the Ice Cream Layer:
1 quart (4 cups) of your favorite ice cream flavor (softened slightly for easier spreading)
For the Frosting:
1/2 cup heavy cream
1 cup powdered sugar
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, softened
Optional: Food coloring or sprinkles for decoration
Instructions:
1. Prepare the Cake Layer:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt.
Cream Butter and Sugar:
In a large bowl, beat the butter and granulated sugar together until light and fluffy.
Add Eggs and Vanilla:
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
Bake:
Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely on a wire rack.
2. Assemble the Ice Cream Layer:
Prepare the Ice Cream:
Slightly soften the ice cream by letting it sit out at room temperature for about 10 minutes. It should be soft but not melted.
Layer the Ice Cream:
Once the cake is completely cooled, place it on a serving plate. If desired, you can freeze the cake for 30 minutes to make it easier to layer the ice cream.
Spread a layer of softened ice cream evenly over the cake. Smooth it out with a spatula. Return to the freezer for at least 2 hours to harden.
3. Prepare the Frosting:
Beat the Cream:
In a mixing bowl, beat the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue to beat until stiff peaks form.
Add Butter:
In another bowl, beat the softened butter until creamy. Gradually add the whipped cream mixture to the butter, mixing until smooth and fluffy.
Add Color (Optional):
If desired, add a few drops of food coloring and mix until evenly distributed.
